Pane Carasau is considered one of the oldest breads in the world. This typical Sardinian bread originates from Barbagia and is also called "carta musica." This name refers to the characteristic sound the bread makes when broken and chewed. Carasau bread preserves the true essence of Sardinia. It speaks of a simple but hospitable people and their dignity even in the most unfortunate moments.
The origin of Pane Carasau, like that of the Nuragic archaeological sites, is shrouded in legend, and some believe it can be traced back to Arab countries. What is certain is that the shepherds could count on unlimited supplies of this "prince of food" for the long periods they spent away from home, thanks to this light, nutritious, and easy-to-store bread.
This bread was prepared in large quantities and at regular intervals in all families and was kept in beautiful chests, even for long periods, like a treasure of immeasurable value. A treasure that today, with Sunalle, is available to everyone in its traditional delicacy.
JUST LIKE IN THE OLD TIMES
The processing of Pane Carasau, called "sa cotta" in the dialect, is divided into four phases: the preparation of the dough, the rising, the baking, and the so-called "carasatura," which gives the bread its name and consists of a second baking, during which the bread is toasted.
The dough for Carasau bread is made with a few simple ingredients: durum wheat semolina, water, salt, and yeast. The resting period is important for the dough to ferment for the first time. At the end of this phase, the dough is cut so that the first processing can take place. The dough is then rolled out and fermented for the second time, after which the semi-finished product is created: the "pane lentu."
The flatbreads are carefully separated and stacked to be toasted in the oven. Thanks to the genuine ingredients and special preparation, Carasau bread provides a high energy intake and a good amount of protein, vitamins, and minerals.
Pane Guttiau is traditionally refined with olive oil.

Fonni is the highest mountain village in Sardinia. This evocative village in Barbagia lies on the northern slopes of the Gennargentu, surrounded by a fairytale horizon and the shining peaks of the mountains that dominate the large valleys.
Here, the name of the Urrai family has long been linked to the production of typical bread: everyone knows the many years of experience of Sunalle, the long-established bakery. In 1991, sisters-in-law Sara and Maria decided to become business partners and launch a joint project. Thanks to the entrepreneurial spirit of Antioco, Maria's husband, they took over an old bakery in Fonni and founded a family business that, over time, has become the leading producer of Carasau bread in Sardinia.
A FAMILY AFFAIR
In 2001, the bakery "Il Vecchio Forno" chose a larger location in Via Ogliastra to accommodate the current staff of more than 30, and also changed its name to Sunalle.
What does Sunalle mean? It is the part of the wheat stalk that remains in the field after the harvest. The Urrai family nickname has become the name of the company and, even today, symbolizes the gift of embracing innovation while remaining firmly rooted in the earth.
Ancient bread, more modern than ever, is Sunalle's motto.
