Three days to reach San Juan de la China in Tolima, another hour by motorcycle and the rest of the way on foot. Arrived at the coffee plantations, one of the best coffee varieties of the Tolima region can be discovered. Mr. Gonzales ' plantations are not only notable for their production, but also represent Asococafe-an organization that connects 80 other passionate coffee producers. The company of Ernest Gonzales – Pradera - is a steep but fertile Land with volcanic soil and are free of pesticides. Each type of single origin is processed by hand. The duration of production is precisely measured to produce this excellent raw coffee with high but pleasant acidity and its typically fruity notes. Origin: Colombia Cordillera Central-Tolima - San Juan De La China Variety: Arabica varieties Caturra and Castillo Processing method: washed / dried in the sun Harvest time: from mid-May to end of July Height: 1,250-1,850 meters Profile in the cup: This coffee presents itself with a clean and balanced taste, as is typical of coffee varieties grown at high altitudes on the central Cordillera of Colombia. It is full bodied, with a high acid content and very low astringency. For the Single Origin coffees we recommend the coffee preparation with the hand filter.
