Description
Origin and Plantation
This organically grown coffee comes from a community of farmers in Jaltenango in the state of Chiapas in southern Mexico. The farmers joined forces in 2011 to combat the financial consequences of coffee rust, a pest fungus. They invested together in the renovation of their farms and benefited from each other's knowledge. The coffee is grown at an altitude of 1,200 - 1,500 meters and is harvested, washed, and dried by hand. The name is based on the nearby, popular fishing village of Celestún, which is home to flamingos and other waterfowl.
