Recipe: Roasted duck breast with date fig crema and caramelized walnuts
Ingredients (for 2 people):
2 duck breast fillets
2 tbsp date fig crema
50 g walnuts
1 tbsp honey
1 tsp butter
Salt and pepper to taste
1 sprig of rosemary
Preparation:
Make diamond-shaped cuts in the skin-side of the duck breast without cutting through the meat. Season with salt and pepper.
Heat a pan without oil over medium heat. Place the duck breast, skin-side down, in the cold pan and heat gently to render the fat. Fry for about 5-7 minutes, until the skin is crispy, then turn and cook for another 3-4 minutes.
Remove the duck breast from the pan, cover with aluminum foil, and let it rest.
Melt the butter in the same pan, add the walnuts and honey, and stir until caramelized.
Cut the duck breast into thin slices, drizzle with the Date Fig Crema, and serve with the caramelized walnuts.
Serve with creamy mashed potatoes or a fine parsnip purée. The sweet and sour note of the crema perfectly rounds off the dish.
