Oignon de Roscoff, the pink onion, owes its name to the pink hue of its skin. It is rich in vitamins A, B, and C. It is an indispensable ingredient in the kitchen for all gourmets.
It has been cultivated in the region around Roscoff in the Finistere department of Brittany for over 400 years. It is protected by a PDO (Protected Designation of Origin).
Its fragrance is fruity, its texture is crisp and very juicy, and its aromas are intense and complex. Its sweet and slightly spicy flavor makes it ideal for use in salads.
Its extremely long shelf life and high content of vitamins A, B, and C were used by sailors centuries ago to combat scurvy, a vitamin C deficiency.
Interesting facts:
Harvesting begins in August, and before they are fully ripe, the onions are braided. They are then left in the field for a few days to dry. It can be stored until May without chemical protection! Just like its flavor, the quality of Roscoff Onion's preservation is based on its variety, which has been selected for over 300 years, and its terroir near the Atlantic.
A good onion can be recognized by the firm pressure on the shoot. If the top of the shoot feels soft when pressed, it has been harvested and stored incorrectly.
The pink onions from Roscoff are firm when pressed and crunchy in the flesh. It is a mild but very aromatic onion and is suitable not only raw in salads but also in sauces, confit d'oignon, and soups.
Unfortunately, onions from Roscoff are rare and limited. 20 growers produce only around 1,300 tons of onions per year on approximately 65 hectares.
Once you've tried it, you'll never want to go back to the regular onion.
Johnnies? This was the name given to the onion traders who left Roscoff in the summer of the mid-19th century to sell their goods in Great Britain, going door to door or, later, by bicycle. In 1929, there were over 1,500 of these tradesmen; today, there are only about 20. In their honor, the Pink Onion Festival, La Fête de l'Oignon Rosé, is held every summer in Roscoff after the harvest.
In 2009, the AOP label was finally awarded, protecting the Roscoff onion in Europe.
Even today, these delicious onions with a controlled designation of origin are produced using traditional know-how – around 1,500 tons were produced in 2019. All production stages, including packaging, take place in an area of ​​approximately 100 hectares around Roscoff.
