Although umeboshi are often called plums, these fruits are botanically related to apricots. Umeboshi are particularly popular in their country of origin, Japan.
They are red to brownish in color, round and taste very salty and sour. Umeboshi are produced in a ripening process of up to 2 years.
Umeboshi are a natural product made with only three ingredients. Free from additives or preservatives, for safe further processing.
Umeboshi fruits are often eaten by the Japanese for breakfast, usually with green tea. However, they are also often served on rice, for example, in a bento or onigiri.
Interesting facts:
The ume fruits, harvested while still green, are cleaned and layered with salt in large wooden vats.
The salt draws water out of the fruits, and a weighted, matching lid forces them to remain below the liquid level.
The lid also presses additional liquid out of the ume fruits.
After one to two months of fermentation by lactic acid cultures in the vats, the fruits are dried and fermented outdoors for four to seven days, depending on the weather.
The fruits are now white and are soaked with shiso leaves in the umeboshi broth that is produced during lactic acid fermentation.
After about a week, the fruits are removed and layered with shiso leaves in barrels, where they mature for another one to two years.
During this As they ripen, the umeboshi take on their characteristic color from the purple shiso leaves.
They now taste salty and sour and are reputed among the Japanese to be good for the intestines.
Umeboshi are often served as a side dish with rice in a bento or made into a bainiku paste.
The fruits contain high amounts of alkaline minerals such as iron, calcium, manganese, and potassium.
Umeboshi Recipe:
Umeboshi Sauce (4 servings)
170g Food-United Umeboshi
1 red chili, finely chopped
4 tomatoes
Deseed and puree the umeboshi.
Finely chop the chili and mix it into the umeboshi paste.
Blanch the tomatoes with hot water and peel them.
Finely chop the flesh and puree it. Mix everything well and use it for seasoning.
