Pineapple Pieces
- Recipe:
175 g Food-United Roscoff onions,
30 g ginger,
400 g carrots,
2 each red and yellow bell peppers,
200 g zucchini,
150 g spring onions,
1 lime,
1 kg Food-United pineapple pieces,
50 g butter,
1 tbsp sugar,
1 tbsp hot Curry powder,
400 ml chicken stock,
400 ml unsweetened coconut milk,
Salt,
Cayenne pepper,
1 bunch of coriander
Peel the onions, halve lengthwise, and cut into thin wedges. Peel the ginger thinly and grate it finely.
Clean the carrots, bell peppers, zucchini, and spring onions and cut into bite-sized pieces. Cut the spring onions into thin rings.
Finely grate the lime zest and squeeze the juice from the fruit.
Sauté the onions and carrots in the butter for 5 minutes, stirring occasionally. Add the bell peppers, sprinkle with sugar and curry powder.
Top up with the chicken stock, then the coconut milk. Season with salt and add cayenne pepper. Simmer gently for 8 minutes. Stir in the zucchini after 4 minutes. Just before the end of the cooking time, add the spring onions and pineapple. Bring to a boil again.
Finely chop the coriander and mix with the lime juice and zest.
