Preparation
Preparation with egg and quark
You add: 125 g butter, 4 eggs, 750 g curd, juice 1/2 lemon
Vegan preparation: 125 g margarine, 750 g natural soy yoghurt or vanilla, juice of 1/2 lemon
1. The quick base
Make the butter or margarine liquid and add the basic mixture for the base stir. Let stand briefly. Pour the flake mixture into the ungreased mold. Press firmly on the bottom and pull up about 2 cm on the sides. Don't worry if everything seems a little crumbly, the flakes will become firm and crispy when baked.
Tip: Dipped into cold water with the back of a tablespoon, the flakes can be easily pressed into the mold.
2. The quick filling
For the filling, add the eggs, quark and lemon juice to the bowl together with the basic mixture for the topping and stir briefly and vigorously with a whisk. There is no need to separate the eggs. To prepare it without eggs or milk, simply mix the soy yogurt, lemon juice and the base mixture for the topping.
3. Baking
Fill the curd mixture or yoghurt mixture into the mold and distribute it evenly. Bake in a preheated oven at 200°C for 50-60 minutes on the lowest rack. This way the cake will be nice and crispy and not too dark on top. The cake is ready when the curd mixture has reached the middle. Bake in the gas oven at level 3.
Please do not bake with convection.
The vegan cake only reaches optimal cutting strength after it has cooled down.
