Production: After cooling, pasteurized milk is heated to an incubation temperature of approx. 38 - 40°C and mixed with the cultures L. acidophilus and B. bifidum, which predominantly produce L(+) dextrorotatory lactic acid. The lactic acid ensures that the protein components coagulate and the milk becomes solid. Lactic acid bacteria are also naturally present in milk. This is why untreated milk naturally turns sour or thickens after some time at room temperature. The yogurt then ripens slowly and gently. After a ripening period of approximately 14 hours (the acidification is monitored and regularly checked by our specialist staff), the yogurt is gently stirred and bottled either on its own or mixed with selected fruit. Heat treatment after fermentation is not permitted for any type of yogurt. Therefore, all yogurts contain live yogurt cultures.
