(甘酢生姜) or
umezu-shōga
(梅酢生姜), is sweet and sour pickled ginger that is used in Japanese cuisine with fish and seafood because of its spicy aroma. It is also said to have digestive properties. Like wasabi and soy sauce, it is a common accompaniment to sushi and, in Germany, to sashimi.
To make gari, fresh peeled ginger is first cut into pieces, salted, left to soak for a few days, and then cut across the grain into wafer-thin slices, or cut straight into slices and lightly salted. It is then briefly blanched. It is then marinated in a previously cooked broth made from rice or plum vinegar, a little water, and sugar (called amazu with rice vinegar, or umezu with plum vinegar). It is often given a slightly pink hue by adding a little red perilla (shiso) or food coloring.
